  • 4 medium potatoes, washed and thinly sliced
  • 1 can cream of mushroom soup (about 10.5 oz)
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Heat a skillet over medium heat, add the ground beef, and brown, breaking it into small pieces. Season with salt and pepper.
  3. Drain excess fat from the beef.
  4. In a large bowl, stir together the sliced potatoes, cream of mushroom soup, and the cooked beef until evenly coated.
  5. Transfer the mixture to the prepared baking dish and sprinkle shredded cheddar cheese on top.
  6. Cover the dish tightly with foil and bake for 30 minutes.
  7. Remove the foil and bake for another 10–15 minutes, until the cheese is melted, bubbly, and lightly golden.
  8. Let the casserole rest for 5 minutes before serving.

Notes

For a lighter version, use reduced-fat soup and lean ground beef. Adjust bake time for thicker potato slices.
