Instructions

  1. Preheat a nonstick or cast-iron skillet over medium heat.
  2. Spread the pizza sauce evenly over one half of the tortilla.
  3. Sprinkle the shredded mozzarella over the sauce and arrange the pepperoni on top.
  4. Fold the tortilla in half and press the seam to seal.
  5. Place the folded tortilla in the skillet and cook for 2-3 minutes without moving it.
  6. Flip the quesadilla and cook another 2-3 minutes until golden and the cheese is melted.
  7. Transfer to a board, let rest for 30 seconds, then slice into wedges.
