  • 1.5 lbs boneless, skinless chicken breasts (about 3 medium) — butterflied or pounded to 1/2 inch
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (panko for extra crunch)
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons milk or water (for the egg wash)
  • Cooking spray (for coating)

Instructions

  1. Place each chicken breast between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
  2. Pat the chicken dry with paper towels.
  3. In a shallow dish, combine Parmesan, breadcrumbs, garlic powder, oregano, salt, and pepper.
  4. In another shallow dish, beat the eggs with milk or water.
  5. Place flour in a third shallow dish.
  6. Dredge one chicken breast in the flour, dip in the egg wash, and then into the Parmesan-breadcrumb mixture.
  7. Preheat your air fryer to 375°F (190°C).
  8. Spray the air fryer basket with cooking spray.
  9. Place the coated chicken breasts in a single layer in the basket, avoiding overcrowding.
  10. Air fry for 8–10 minutes, flip, and then cook another 5–8 minutes until the internal temperature reaches 165°F (74°C).
  11. Remove and let rest for 3–5 minutes before serving.

Notes

For gluten-free, use gluten-free flour and breadcrumbs. You can substitute Pecorino Romano for a sharper flavor. Add chopped fresh parsley for extra herb brightness.
