- 4 chicken breasts (horizontally sliced in half)
- 6 slices of cooked bacon
- 2 cups Monterey Jack cheese
- 1/3 cup mayo
- 1 Tbsp honey
- 2 tsp stone-ground mustard
Instructions
- Preheat your oven to 350°F (175°C).
- In a small bowl, mix the mayo, honey, and stone-ground mustard together to make the sauce.
- Place the chicken breasts in a baking dish and coat them with the sauce.
- Lay the cooked bacon strips over the chicken.
- Sprinkle the Monterey Jack cheese on top of the bacon.
- Bake in the oven for about 30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Remove from the oven and let it rest for a few minutes before serving.
