Ingredients

  • 4 chicken breasts (horizontally sliced in half)
  • 6 slices of cooked bacon
  • 2 cups Monterey Jack cheese
  • 1/3 cup mayo
  • 1 Tbsp honey
  • 2 tsp stone-ground mustard

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, mix the mayo, honey, and stone-ground mustard together to make the sauce.
  3. Place the chicken breasts in a baking dish and coat them with the sauce.
  4. Lay the cooked bacon strips over the chicken.
  5. Sprinkle the Monterey Jack cheese on top of the bacon.
  6. Bake in the oven for about 30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  7. Remove from the oven and let it rest for a few minutes before serving.
