- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil (divided)
- 1/4 cup balsamic vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup shredded mozzarella cheese
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
- Season the chicken breasts with salt and pepper on both sides.
- Whisk together balsamic vinegar, honey or maple syrup, basil, oregano, and garlic in a small bowl.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the chicken for 2–3 minutes on each side until golden brown.
- Transfer the seared chicken to the baking dish, pour the balsamic mixture over, and scatter cherry tomatoes around.
- Bake for about 20–25 minutes, until the chicken is nearly cooked through.
- Add mozzarella on top and bake for an additional 5–10 minutes until bubbly.
- Garnish with fresh basil or parsley and serve warm.
Notes
Customize with chicken thighs or turkey for a lighter version. Add red pepper flakes for a spicy kick.
