  • Salt and pepper, to taste
  • 2 tablespoons olive oil (divided)
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Whisk together balsamic vinegar, honey or maple syrup, basil, oregano, and garlic in a small bowl.
  4. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the chicken for 2–3 minutes on each side until golden brown.
  5. Transfer the seared chicken to the baking dish, pour the balsamic mixture over, and scatter cherry tomatoes around.
  6. Bake for about 20–25 minutes, until the chicken is nearly cooked through.
  7. Add mozzarella on top and bake for an additional 5–10 minutes until bubbly.
  8. Garnish with fresh basil or parsley and serve warm.

Notes

Customize with chicken thighs or turkey for a lighter version. Add red pepper flakes for a spicy kick.
