Description

A flavorful and easy weeknight dinner featuring tender chicken, vibrant vegetables, and a spicy, creamy sauce served over rice.

Ingredients

Scale
  • 1 pound Chicken Breast
  • 2 cups Mixed Vegetables (such as bell peppers, broccoli, or snap peas)
  • 2 cups Rice (white, quinoa, or brown rice)
  • 1/2 cup Mayonnaise
  • 1/4 cup Sweet Chili Sauce
  • 2 tablespoons Sriracha

Instructions

  1. Begin by cooking the rice according to package directions; set it aside once fluffy.
  2. While the rice is cooking, prepare the chicken. Heat a skillet over medium heat and add a splash of oil. Once hot, add the diced chicken and cook for about 6-7 minutes, or until cooked through.
  3. Toss in your mixed vegetables and cook for another 3-4 minutes until they’re tender yet still crisp.
  4. In a bowl, mix together the mayonnaise, sweet chili sauce, and Sriracha until the sauce is smooth. Adjust seasonings to your preference.
  5. Combine the chicken and veggies in the skillet with the sauce, tossing to coat everything evenly.
  6. Serve the chicken and vegetable mix over a mound of rice. Enjoy!

Notes

Garnish with sliced green onions or sesame seeds. Pairs well with cucumber salad or spring rolls.
