- 1 pound Chicken Breast
- 2 cups Mixed Vegetables (such as bell peppers, broccoli, or snap peas)
- 2 cups Rice (white, quinoa, or brown rice)
- 1/2 cup Mayonnaise
- 1/4 cup Sweet Chili Sauce
- 2 tablespoons Sriracha
Instructions
- Begin by cooking the rice according to package directions; set it aside once fluffy.
- While the rice is cooking, prepare the chicken. Heat a skillet over medium heat and add a splash of oil. Once hot, add the diced chicken and cook for about 6-7 minutes, or until cooked through.
- Toss in your mixed vegetables and cook for another 3-4 minutes until they’re tender yet still crisp.
- In a bowl, mix together the mayonnaise, sweet chili sauce, and Sriracha until the sauce is smooth. Adjust seasonings to your preference.
- Combine the chicken and veggies in the skillet with the sauce, tossing to coat everything evenly.
- Serve the chicken and vegetable mix over a mound of rice. Enjoy!
Notes
Garnish with sliced green onions or sesame seeds. Pairs well with cucumber salad or spring rolls.
