Instructions

  1. Marinate the Chicken: Cut the chicken breasts into bite-sized pieces. In a bowl, mix the buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken and ensure it’s fully submerged. Cover the bowl and refrigerate for at least one hour, or overnight for best flavor.
  2. Make the Bang Bang Sauce: In another bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, lime juice, and garlic powder. Taste to adjust the heat or sweetness according to your preference.
  3. Dredge and Fry the Chicken: In a shallow dish, combine the flour and panko. Remove the chicken from the marinade, dredge each piece in the flour mixture, and fry in oil heated to 350°F (175°C) in batches until golden and cooked through, about 3–4 minutes per side. Drain on paper towels.
  4. Assemble the Sliders: Lightly toast the slider buns. Spread a generous amount of Bang Bang sauce on the bottom bun. Top with fried chicken, shredded lettuce, red onion, and pickles if you wish. Garnish with cilantro, and cap them with the top bun.
