Description

Delicious bite-sized salmon pieces coated in crispy panko breadcrumbs and served with a zesty Bang Bang sauce.

Ingredients

Scale
  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to spice level)
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish

Instructions

  1. Preheat Oven or Air Fryer: Set your oven to 400°F (200°C) or preheat your air fryer.
  2. Season the Salmon: In a mixing bowl, combine the salmon cubes, garlic powder, smoked paprika, salt, and black pepper. Toss gently to coat.
  3. Coat in Breadcrumbs: Drizzle olive oil over the salmon mixture. Then, roll the seasoned salmon pieces in panko breadcrumbs until fully coated.
  4. Bake or Air-Fry: Place the breadcrumb-coated salmon on a baking sheet lined with parchment paper. Bake for about 12-15 minutes or air-fry for 8-10 minutes until crispy and golden.
  5. Make the Bang Bang Sauce: In a small bowl, mix together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice.
  6. Assemble the Bowls: Serve your salmon bites over jasmine or cauliflower rice. Top with shredded cabbage, avocado slices, shredded carrots, and green onions. Drizzle generously with the Bang Bang sauce and garnish with cilantro and sesame seeds.

Notes

For a tangy twist, substitute mayonnaise with Greek yogurt. Use any hot sauce you prefer instead of sriracha.
