- 2 cups Cooked Chicken, shredded or diced
- 1 cup BBQ Sauce
- 1 Red Onion, diced
- 1 cup Corn, canned or frozen
- 1 cup Cheddar Cheese, shredded
- 2 tablespoons Olive Oil
- Salt, to taste
- Black Pepper, to taste
- 1 teaspoon Smoked Paprika (optional)
- Green Onions, for garnish, sliced
Instructions
- Peel and dice the sweet potatoes into small, uniform cubes. Heat olive oil in a large skillet over medium heat. Add the sweet potatoes, sprinkle with salt, and cook for about 10-12 minutes, or until fork-tender.
- Stir in the diced red onion and corn. Cook for an additional 3-5 minutes.
- Add the shredded cooked chicken and pour in the BBQ sauce. Stir to combine everything thoroughly, ensuring the sweet potatoes are coated. Allow to simmer for another 5 minutes.
- Sprinkle the shredded cheddar cheese over the top. Cover the skillet for a couple of minutes until the cheese is melted. Once melted, remove from heat, garnish with green onions, and serve hot.
Notes
Feel free to substitute the cheddar cheese with Monterey Jack or a dairy-free alternative. Ensure BBQ sauce is allergen-free.
