- 1 pound ground beef (80/20)
- 4 medium potatoes, thinly sliced (Yukon Gold or russet)
- 2 cups shredded cheese (cheddar or your choice)
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 cup beef broth (low-sodium)
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic. Sauté 3–4 minutes until translucent and fragrant.
- Add the ground beef to the skillet. Break it up with a spoon and cook until browned. Season with salt and pepper. Drain any excess fat if desired.
- Arrange half of the thinly sliced potatoes in an even layer on the bottom of the prepared baking dish. Season lightly with salt and pepper.
- Spoon half of the beef mixture over the potatoes in an even layer. Sprinkle half of the shredded cheese on top.
- Repeat with the remaining potato slices, the rest of the beef, and finish with the remaining cheese.
- Pour the cup of beef broth evenly over the layered casserole.
- Cover the dish tightly with aluminum foil and bake for 45 minutes.
- Remove the foil and bake an additional 15 minutes, or until the cheese is bubbly and golden and the potatoes are fork-tender. Let rest 5 minutes before serving.
Notes
Great for meal prep; leftovers reheat well. Can use ground turkey or plant-based crumbles for a lighter version. Try mixing cheeses for creaminess.
