- 2 bell peppers, sliced
- 1 red onion, sliced
- 1 zucchini, sliced
- 3 tablespoons olive oil
- 2 tablespoons shawarma seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the sliced chicken breast, bell peppers, red onion, and zucchini in a large bowl.
- Drizzle the mixture with olive oil and sprinkle on the shawarma seasoning, along with salt and pepper.
- Toss everything together until it’s evenly coated in the seasoning.
- Spread the chicken and vegetable mixture evenly on a sheet pan.
- Bake for 25–30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Sprinkle with chopped parsley before serving.
Notes
Consider marinating the chicken for a few hours or overnight for maximum flavor. Serve with couscous or pita for a complete meal.
