Ingredients

  • 2 tbsp finely chopped dill pickles
  • 1 tbsp yellow mustard
  • 1 tsp white vinegar
  • 1 tsp paprika
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 1 lb lean ground beef
  • ½ cup finely chopped onion
  • Salt and pepper (to taste)
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • Dill pickle slices (optional)
  • 1 tbsp olive oil

Instructions

  1. In a small bowl, combine mayonnaise, dill pickles, mustard, vinegar, paprika, garlic powder, and onion powder. Whisk until smooth and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add ground beef and onions. Cook until beef is browned and onions are softened. Season with salt and pepper to taste and drain any excess fat.
  3. Lay out a flour tortilla and add a generous spoonful of the cooked beef mixture, followed by shredded lettuce, cheese, and special sauce.
  4. Fold in the sides of the tortilla and roll it up from the bottom. Secure with a toothpick if needed, then slice in half for serving.

Notes

For a healthier twist, substitute Greek yogurt for mayonnaise and swap beef for turkey or plant-based meat.
