  • 1 can black beans, rinsed and drained (15 oz)
  • 1 cup white rice (long-grain)
  • 1 lb sausage (chicken, pork, turkey, or smoked kielbasa)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (any color)
  • 2 cups chicken broth (or vegetable broth for vegetarian)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 12 tablespoons olive oil

Instructions

  1. Heat a large, heavy-bottomed pot or deep skillet over medium heat. Add the olive oil.
  2. Add the diced onion and chopped bell pepper. Sauté for 4–5 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Push the vegetables to the side and add the sausage. Cook, stirring occasionally, until nicely browned and cooked through (about 6–8 minutes).
  4. Stir in the rice and toast it with the sausage and aromatics for 1–2 minutes.
  5. Add the rinsed black beans, chicken broth, cumin, smoked paprika, salt, and pepper. Stir once to combine.
  6. Bring the pot to a gentle boil, then reduce heat to low. Cover and simmer for about 18–20 minutes, or until rice is tender and liquid is absorbed.
  7. Remove from heat and let rest, covered, for 5 minutes. Fluff with a fork, adjust seasoning, and serve.

Notes

Add a squeeze of lime and chopped cilantro for a fresh touch. This dish can be made vegetarian by swapping the sausage for diced tempeh or smoked tofu.
