  • 1 tablespoon light soy sauce (or soy sauce)
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth
  • 2 tablespoons light soy sauce (or soy sauce)
  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 2 teaspoons dark soy sauce (or soy sauce)
  • 1 tablespoon cornstarch
  • 1 1/2 tablespoons sugar
  • 2 teaspoons coarsely ground black pepper
  • 1/8 teaspoon salt
  • 2 tablespoons peanut oil (or vegetable oil)
  • 1 tablespoon minced ginger
  • 2 cloves garlic, minced
  • 1/2 white onion, chopped
  • 2 bell peppers, chopped (mixed colors)

Instructions

  1. Combine chicken, light soy sauce, Shaoxing wine, and cornstarch in a medium bowl. Marinate for 10 to 15 minutes.
  2. Prepare the sauce by mixing chicken broth, light soy sauce, Shaoxing wine, dark soy sauce, cornstarch, sugar, black pepper, and salt in a small bowl. Set aside.
  3. Heat 1 tablespoon of peanut oil in a large skillet over medium-high heat. Add marinated chicken and sear for about 1 minute until browned. Flip and cook for another 30 seconds to 1 minute. Transfer to a plate.
  4. In the same skillet, add remaining oil, ginger, and garlic. Stir quickly until fragrant, about 10-15 seconds. Add onion and bell peppers; sauté for 20 seconds until tender.
  5. Stir the sauce mixture and pour it into the skillet. Stir continuously until it thickens slightly. Return the chicken and toss to coat.
  6. Turn off the heat and transfer everything to a plate to prevent overcooking.
  7. Serve hot.

Notes

Marinate chicken longer for deeper flavor. Adjust black pepper to preference for spice level.
