- 8 ounces of pasta (penne or rigatoni)
- 1 pound of smoked sausage, sliced
- 1 bell pepper, diced
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or pepper jack)
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat and brown the sliced sausage.
- Add the diced onion, bell pepper, and minced garlic to the pot and sauté until softened.
- Stir in the Cajun seasoning and let it cook for an additional minute.
- Add the pasta and enough water to cover it. Bring to a boil, then reduce heat and simmer until pasta is al dente.
- Mix in the heavy cream and shredded cheese until a creamy sauce forms.
- Season with salt and pepper to taste and serve hot, garnished with fresh parsley.
