Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 3/4 cup vegetable oil
  • 2 cups finely grated fresh carrots
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts optional
  • 4 ounces cream cheese softened
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. 1. Preheat oven to 350 degrees Fahrenheit and prepare a 9×5 inch loaf pan with grease and parchment paper
  2. 2. Whisk flour baking powder baking soda cinnamon and salt in a bowl
  3. 3. In another bowl whisk brown sugar granulated sugar eggs oil and vanilla until smooth
  4. 4. Stir grated carrots into the wet mixture
  5. 5. Fold dry ingredients into wet ingredients just until combined
  6. 6. Fold in walnuts if using
  7. 7. Pour batter into prepared pan and smooth the top
  8. 8. Bake for 50 to 60 minutes until a toothpick comes out clean
  9. 9. Cool in pan for 15 minutes then transfer to wire rack
  10. 10. Whisk cream cheese powdered sugar and milk then drizzle over cooled loaf

Notes

  • Grate carrots finely for best texture
  • Do not squeeze moisture from the carrots
  • Avoid overmixing the batter
  • Cool completely before adding glaze
  • Store covered at room temperature for 2 days
