- 2 pounds Chicken Breasts, sliced lengthwise
- Salt & Pepper, to taste
- 1 cup All-Purpose Flour
- 1 large Egg, beaten
- 1 cup Panko Bread Crumbs
- 1/2 cup Grated Romano Cheese
- 2 tablespoons Fresh Parsley, optional
- 1 tablespoon Lemon Zest
- 1/4 cup Avocado Oil or Olive Oil
- 1 cup Shredded Mozzarella Cheese
Instructions
- Prep the chicken breasts by slicing them lengthwise and seasoning with salt and pepper.
- Set up three bowls: one with flour, one with beaten egg, and one with panko breadcrumbs mixed with Romano cheese and lemon zest.
- Coat each chicken piece in flour, then in the egg, and finally in the panko mixture, pressing firmly to adhere.
- Cook in a skillet with heated oil over medium heat for 3-4 minutes on each side until golden brown.
- Melt the mozzarella cheese on top of the chicken and cover the skillet for 2-3 minutes.
- Serve immediately, garnished with fresh parsley if desired.
Notes
For leftovers, store in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months. Reheat in a preheated oven for best results.
