  • Salt & Pepper, to taste
  • 1 cup All-Purpose Flour
  • 1 large Egg, beaten
  • 1 cup Panko Bread Crumbs
  • 1/2 cup Grated Romano Cheese
  • 2 tablespoons Fresh Parsley, optional
  • 1 tablespoon Lemon Zest
  • 1/4 cup Avocado Oil or Olive Oil
  • 1 cup Shredded Mozzarella Cheese

Instructions

  1. Prep the chicken breasts by slicing them lengthwise and seasoning with salt and pepper.
  2. Set up three bowls: one with flour, one with beaten egg, and one with panko breadcrumbs mixed with Romano cheese and lemon zest.
  3. Coat each chicken piece in flour, then in the egg, and finally in the panko mixture, pressing firmly to adhere.
  4. Cook in a skillet with heated oil over medium heat for 3-4 minutes on each side until golden brown.
  5. Melt the mozzarella cheese on top of the chicken and cover the skillet for 2-3 minutes.
  6. Serve immediately, garnished with fresh parsley if desired.

Notes
