- 1 ½ lbs ground beef (or ground turkey)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 5–6 medium russet potatoes, thinly sliced (about 1/8 inch)
- 2 cups shredded cheddar cheese, divided
- 1 cup shredded mozzarella (optional)
- 1 (10.5 oz) can cream of mushroom soup (or cream of chicken)
- 1 cup milk
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- 1 tbsp olive oil or butter (for greasing the dish)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with olive oil or butter.
- Brown the beef: Heat a skillet over medium-high heat. Add the ground beef and chopped onion. Cook until the beef is browned and the onion is soft. Drain excess fat.
- Add aromatics and season: Stir in the minced garlic, salt, pepper, and paprika. Cook for 30 seconds until fragrant, then remove from heat.
- Make the sauce: In a bowl, whisk the cream of mushroom soup with the milk until smooth. Adjust seasoning if needed.
- Layer the casserole: Arrange half of the potatoes in the dish, layer half of the beef mixture, pour half of the sauce, and sprinkle 1 cup of cheddar.
- Repeat layers: Add the remaining potatoes, beef, sauce, and top with remaining cheddar and mozzarella. Press down slightly.
- Bake covered: Cover with foil and bake for 45 minutes.
- Finish uncovered: Remove foil and bake for another 15–20 minutes until potatoes are tender and cheese is golden.
- Rest and serve: Let rest for 5 minutes, then scoop and serve.
Notes
If you prefer lower sodium, use low-sodium soup or make a cream sauce. Can be assembled ahead of time and refrigerated.
