  • 8 oz. pasta (penne, rotini, or shells)
  • 1 lb. ground beef (or ground turkey, chicken, or plant-based crumble)
  • 1 packet taco seasoning (or 2 tbsp homemade blend)
  • 1 can diced tomatoes (14.5 oz) — with their juices
  • 1 can black beans (15 oz), drained and rinsed
  • 2 cups beef broth (or chicken/vegetable broth)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup corn (optional; frozen or canned)
  • Salt and pepper to taste

Instructions

  1. Heat a large pot or deep skillet over medium heat. Add the ground beef and cook, breaking it up, until no pink remains (about 6–8 minutes). Drain excess fat if desired.
  2. Sprinkle in the taco seasoning and stir for 30–60 seconds to bloom the spices.
  3. Pour in the diced tomatoes (with juices), rinsed black beans, beef broth, and pasta. Stir to combine and bring the pot to a boil.
  4. Once boiling, reduce heat to a simmer, cover partially, and cook until the pasta is tender, about 10–12 minutes. Stir occasionally.
  5. Remove from heat and stir in the shredded cheese until melted and creamy. Add corn now if using.
  6. Taste and season with salt and pepper as needed. Serve hot.

Notes

For a vegetarian option, replace beef with crumbled tofu or extra beans and use vegetable broth.
