- 340 g rotini pasta
- 2 chicken breasts (about 1 lb / 450 g total)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- ½ cup shredded mozzarella cheese
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 tablespoons chopped parsley (for garnish)
Instructions
- Pat the chicken dry and season both sides with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add the chicken and sear for 5–6 minutes per side until golden and cooked through. Remove and let rest.
- Bring a large pot of salted water to a boil and cook rotini until al dente, usually 8–10 minutes. Drain and set aside.
- Sauté the minced garlic in the same skillet for 1–2 minutes until fragrant.
- Pour in heavy cream and bring to a gentle simmer; let it bubble softly for 2–3 minutes to thicken.
- Whisk in Parmesan and mozzarella until the sauce is smooth.
- Toss the drained rotini in the sauce until well coated.
- Plate the pasta and top with sliced chicken and parsley. Serve immediately.
Notes
Use freshly grated Parmesan for optimal melting and flavor. Reserve pasta water to adjust sauce consistency if needed.
