- 2 slices of bread (sourdough, whole grain, or ciabatta)
- 1 grilled chicken breast, seasoned to taste
- 1 ripe avocado
- 1 slice of cheese (cheddar, pepper jack, or your choice)
- Salt and pepper to taste
- Butter (for grilling)
Instructions
- Begin by grilling the chicken breast over medium heat until it reaches a temperature of 165°F, about 6-7 minutes on each side, depending on thickness.
- While the chicken is cooking, cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and season with salt and pepper to taste.
- Once the chicken is done, place it on one slice of your choice of bread.
- Generously spread the mashed avocado on top of the chicken.
- Layer a slice of cheese over the avocado.
- Cap it off with the second slice of bread.
- Heat a skillet over medium heat and add a little butter until it’s melted.
- Place the sandwich into the skillet and grill for about 3-4 minutes on each side, until the bread is golden brown and the cheese has melted.
- Remove the sandwich from the skillet, slice it in half, and serve warm.
Notes
For added flavor, consider mixing lime juice or cilantro into the avocado.
