  • 1 ripe avocado
  • 1 slice of cheese (cheddar, pepper jack, or your choice)
  • Salt and pepper to taste
  • Butter (for grilling)

Instructions

  1. Begin by grilling the chicken breast over medium heat until it reaches a temperature of 165°F, about 6-7 minutes on each side, depending on thickness.
  2. While the chicken is cooking, cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and season with salt and pepper to taste.
  3. Once the chicken is done, place it on one slice of your choice of bread.
  4. Generously spread the mashed avocado on top of the chicken.
  5. Layer a slice of cheese over the avocado.
  6. Cap it off with the second slice of bread.
  7. Heat a skillet over medium heat and add a little butter until it’s melted.
  8. Place the sandwich into the skillet and grill for about 3-4 minutes on each side, until the bread is golden brown and the cheese has melted.
  9. Remove the sandwich from the skillet, slice it in half, and serve warm.
