  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 ½ cups buttermilk
  • 1 egg
  • 1 tablespoon hot sauce (optional)
  • Oil for frying (vegetable or peanut oil)
  • ¼ cup reserved oil from frying
  • ⅓ cup additional flour for gravy
  • 2 cups milk
  • Extra salt and pepper for seasoning

Instructions

  1. Heat oil in a deep fryer or a large, heavy-bottomed pan to 325°F.
  2. Whisk together flour, baking powder, baking soda, salt, pepper, and garlic powder in a large bowl.
  3. Whisk buttermilk, egg, and hot sauce in another bowl until smooth.
  4. Dredge each chicken breast in the flour mixture, then dip into the egg mixture, and back into the flour mixture.
  5. Place the coated chicken into the pan or fryer and fry for about 3-5 minutes on each side until golden brown.
  6. Remove fried chicken and let drain on a paper towel-lined plate.
  7. To make gravy, heat reserved frying oil in a large pan and stir in flour until absorbed.
  8. Whisk in milk slowly, mixing continuously until gravy thickens; season with salt and pepper to taste.
  9. Pour hot gravy over the fried chicken just before serving.

Notes

Marinate chicken in buttermilk for at least 1-2 hours for extra tenderness. Double dredging will give you more crunch.
