- 6–8 thinly sliced chicken breasts
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 ½ cups buttermilk
- 1 egg
- 1 tablespoon hot sauce (optional)
- Oil for frying (vegetable or peanut oil)
- ¼ cup reserved oil from frying
- ⅓ cup additional flour for gravy
- 2 cups milk
- Extra salt and pepper for seasoning
Instructions
- Heat oil in a deep fryer or a large, heavy-bottomed pan to 325°F.
- Whisk together flour, baking powder, baking soda, salt, pepper, and garlic powder in a large bowl.
- Whisk buttermilk, egg, and hot sauce in another bowl until smooth.
- Dredge each chicken breast in the flour mixture, then dip into the egg mixture, and back into the flour mixture.
- Place the coated chicken into the pan or fryer and fry for about 3-5 minutes on each side until golden brown.
- Remove fried chicken and let drain on a paper towel-lined plate.
- To make gravy, heat reserved frying oil in a large pan and stir in flour until absorbed.
- Whisk in milk slowly, mixing continuously until gravy thickens; season with salt and pepper to taste.
- Pour hot gravy over the fried chicken just before serving.
Notes
Marinate chicken in buttermilk for at least 1-2 hours for extra tenderness. Double dredging will give you more crunch.
