- 2 cups cooked chicken, shredded
- 1 cup broccoli florets
- 1 cup carrots, sliced
- 1/2 cup heavy cream
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon chopped parsley (for garnish)
Instructions
- Heat the olive oil: Place a skillet over medium heat and add the olive oil.
- Sauté the garlic: Once the oil is shimmering, add the minced garlic. Sauté for about 30 seconds or until it becomes fragrant.
- Cook the vegetables: Add the broccoli florets and sliced carrots. Cook these for about 5–7 minutes until they are tender but still vibrant.
- Stir in chicken and rice: Add the shredded chicken and cooked rice to the skillet. Mix everything thoroughly.
- Incorporate the creamy sauce: Pour in the heavy cream, stirring gently. Season with salt and pepper, and cook for another 2–3 minutes until warmed through.
- Serve and garnish: Spoon the mixture into bowls and finish with chopped parsley.
Notes
Consider adding grated Parmesan cheese or crushed red peppers as toppings. Pair it with a side salad or crusty bread.
