Ingredients

- 1 lb chicken breast, sliced
- 2 medium zucchinis, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 bell pepper, sliced
- 2 tablespoons soy sauce
- Salt and pepper, to taste
- Cooked rice or noodles for serving
Instructions
- Heat the olive oil in a large pan over medium heat until shimmering.
- Add the sliced chicken and cook for about 5-7 minutes or until browned and cooked through.
- Once the chicken is done, toss in the minced garlic and sliced bell pepper. Sauté for another 2-3 minutes until fragrant.
- Stir in the sliced zucchini along with the soy sauce. Cook until the zucchini is tender, about 3-4 minutes.
- Season with salt and pepper to taste.
- Serve the stir fry hot over cooked rice or noodles.
Notes
Prep ahead by slicing veggies the night before. For a low-carb version, serve in lettuce wraps.
