Ingredients

  • 2 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 2 tablespoons soy sauce
  • Salt and pepper, to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat the olive oil in a large pan over medium heat until shimmering.
  2. Add the sliced chicken and cook for about 5-7 minutes or until browned and cooked through.
  3. Once the chicken is done, toss in the minced garlic and sliced bell pepper. Sauté for another 2-3 minutes until fragrant.
  4. Stir in the sliced zucchini along with the soy sauce. Cook until the zucchini is tender, about 3-4 minutes.
  5. Season with salt and pepper to taste.
  6. Serve the stir fry hot over cooked rice or noodles.
