- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- 2 tablespoons chili powder
- 2 cloves garlic, minced
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Combine lime juice, olive oil, chili powder, minced garlic, salt, and pepper in a bowl to create a marinade.
- Place chicken breasts in a resealable bag or shallow dish and pour marinade over chicken.
- Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes.
- Preheat your grill or oven to 400°F (200°C).
- If grilling, cook chicken for about 6-7 minutes on each side, or roast in a baking dish for 25-30 minutes.
- Remove chicken from heat and let it rest for a few minutes.
- Garnish with chopped cilantro if desired and serve.
Notes
For deeper flavor, marinate for 2-4 hours or overnight. Use a meat thermometer to ensure chicken reaches 165°F.
