Ingredients

  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup bell peppers, diced
  • 1/2 cup green onions, chopped
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 package eggroll wrappers
  • Vegetable oil for frying

Instructions

  1. Combine the shredded chicken, black beans, corn, diced bell peppers, chopped green onions, and cheese in a large mixing bowl. Add cumin and chili powder, and stir until well combined.
  2. Lay out an eggroll wrapper with one corner facing you in a diamond shape. Spoon about 2 tablespoons of the filling onto the wrapper, near the bottom corner.
  3. Roll the wrapper tightly over the filling, folding in the sides as you go, until it’s securely closed. Seal with a dab of water if necessary.
  4. Heat vegetable oil in a large pan over medium heat. Add the eggrolls in batches, frying for about 3-4 minutes per side until they are golden brown and crispy.
  5. Remove the cooked eggrolls from the oil and drain on paper towels to remove excess grease.
  6. Serve warm with your choice of dipping sauce.

Notes

For a vegetarian option, replace the chicken with more beans or plant-based protein. Best served with salsa, guacamole, or ranch dressing.
