- 1 cup shredded cooked chicken
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 cup bell peppers, diced
- 1/2 cup green onions, chopped
- 1 cup shredded cheese (cheddar or pepper jack)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 package eggroll wrappers
- Vegetable oil for frying
Instructions
- Combine the shredded chicken, black beans, corn, diced bell peppers, chopped green onions, and cheese in a large mixing bowl. Add cumin and chili powder, and stir until well combined.
- Lay out an eggroll wrapper with one corner facing you in a diamond shape. Spoon about 2 tablespoons of the filling onto the wrapper, near the bottom corner.
- Roll the wrapper tightly over the filling, folding in the sides as you go, until it’s securely closed. Seal with a dab of water if necessary.
- Heat vegetable oil in a large pan over medium heat. Add the eggrolls in batches, frying for about 3-4 minutes per side until they are golden brown and crispy.
- Remove the cooked eggrolls from the oil and drain on paper towels to remove excess grease.
- Serve warm with your choice of dipping sauce.
Notes
For a vegetarian option, replace the chicken with more beans or plant-based protein. Best served with salsa, guacamole, or ranch dressing.
