  • 2 tablespoons honey
  • Salt and pepper to taste
  • 2 pounds potatoes (Yukon Gold or russet)
  • 1/2 cup milk (whole milk recommended)
  • 4 ounces smoked gouda cheese, shredded
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking dish with foil for easy cleanup.
  2. Whisk the chipotle sauce and honey together in a medium bowl until smooth. Season with salt and pepper.
  3. Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
  4. Coat each thigh with the chipotle-honey mixture, placing them skin-side up in the prepared baking dish.
  5. Roast the chicken for 25–30 minutes, ensuring the thickest part reaches 165°F (74°C).
  6. While the chicken roasts, peel and cube the potatoes and cook in salted water until fork-tender, about 12–15 minutes.
  7. Drain the potatoes, then return them to the pot. Add milk and butter, then mash until smooth.
  8. Stir in the shredded smoked gouda until melted. Season with salt and pepper to taste.
  9. Let the chicken rest for 5 minutes before serving over the mashed potatoes.

Notes

Serve with a side of roasted vegetables for added color and nutrition. For a lighter version, use almond milk and reduce butter.
