Juicy marinated chicken thighs glazed with sweet and smoky chipotle honey, served over smooth and creamy smoked gouda mashed potatoes.

- 4 chicken thighs
- 1/4 cup chipotle honey sauce
- 2 cups potatoes, peeled and cubed
- 1/2 cup smoked gouda cheese, shredded
- 1/4 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, marinate the chicken thighs in chipotle honey sauce for at least 30 minutes.
- Arrange the marinated chicken on a baking sheet and bake for 25-30 minutes, or until caramelized and cooked through.
- While the chicken bakes, bring a pot of salted water to boil and cook the cubed potatoes until tender, about 15 minutes.
- Drain the potatoes and return them to the pot.
- Add the smoked gouda, milk, butter, salt, and pepper. Mash until creamy.
- Serve the chicken thighs over the gouda mashed potatoes.
Notes
For a twist, try grilling the chicken instead of baking. Store leftovers in an airtight container in the fridge for up to 3 days.
