Ingredients

  • 4 chicken thighs
  • 1/4 cup chipotle honey sauce
  • 2 cups potatoes, peeled and cubed
  • 1/2 cup smoked gouda cheese, shredded
  • 1/4 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, marinate the chicken thighs in chipotle honey sauce for at least 30 minutes.
  3. Arrange the marinated chicken on a baking sheet and bake for 25-30 minutes, or until caramelized and cooked through.
  4. While the chicken bakes, bring a pot of salted water to boil and cook the cubed potatoes until tender, about 15 minutes.
  5. Drain the potatoes and return them to the pot.
  6. Add the smoked gouda, milk, butter, salt, and pepper. Mash until creamy.
  7. Serve the chicken thighs over the gouda mashed potatoes.

Notes

For a twist, try grilling the chicken instead of baking. Store leftovers in an airtight container in the fridge for up to 3 days.
