- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- ¼ cup granulated sugar (for strawberry swirl)
- 3 large eggs, room temperature
- 1 cup sour cream
- 1 cup melted dark chocolate (60–70% cocoa)
- 1 cup fresh strawberries, pureed
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the chocolate cookie crumbs with melted butter until evenly moistened. Press into a 9-inch springform pan. Bake for 10 minutes and cool slightly.
- Lower oven temperature to 325°F (160°C).
- Beat cream cheese until smooth. Add 1 cup sugar and mix. Add eggs one at a time, mixing just until blended.
- Stir in sour cream and melted dark chocolate until silky. Avoid overbeating.
- Puree strawberries with ¼ cup sugar and lemon juice until smooth.
- Pour chocolate filling over baked crust. Spoon dollops of strawberry puree across the surface and swirl gently.
- Bake for 50–60 minutes until edges are set and center jiggles.
- Turn off oven and crack the door open; cool inside for 1 hour.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
Let cream cheese and eggs come to room temperature for a lump-free filling. Can substitute some ingredients for dairy-free options.
