- 1 cup unsalted butter, melted and slightly cooled
- 1 1/4 cups light brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon cream of tartar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup granulated sugar (for the cinnamon swirl)
- 1 tablespoon ground cinnamon (for the cinnamon swirl)
- 2 tablespoons unsalted butter, melted (for the swirl)
- 2 tablespoons granulated sugar mixed with 1/2 teaspoon ground cinnamon (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- Mix the melted butter, light brown sugar, and granulated sugar until smooth. Add in the eggs and vanilla extract, mixing until well combined.
- Combine the flour, cream of tartar, baking soda, and salt in another bowl, then add to the wet ingredients, stirring until just combined.
- Prepare the cinnamon swirl by mixing granulated sugar, ground cinnamon, and melted butter in a small bowl.
- Layer half of the blondie batter into the prepared pan, then spoon half of the cinnamon mixture over it. Repeat with the remaining batter and cinnamon mixture, swirling gently.
- Add the cinnamon-sugar topping over the batter before baking.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Cool in the pan for 15 minutes, then lift out and cool completely before slicing.
Notes
Store leftovers in an airtight container at room temperature for up to three days or freeze for up to three months.
