Instructions
- Prepare the rice: Cook your rice according to the package instructions. Set aside once done.
- Sauté garlic and ginger: In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger. Sauté for about 1 minute until aromatic.
- Cook the chicken: Slice the boneless chicken breasts into bite-sized pieces and add them to the skillet. Cook for about 5-7 minutes until golden brown on the outside and cooked through.
- Add coconut milk: Pour in the can of coconut milk, soy sauce, and lime juice. Stir to combine, ensuring that the chicken is well coated with the creamy sauce.
- Simmer: Allow the mixture to simmer for an additional 5-10 minutes on low heat, letting the flavors meld together. Season with salt and pepper to taste.
- Serve: Layer the cooked rice into bowls and spoon the coconut chicken mixture over the top. Garnish with freshly chopped cilantro or green onions.
