Ingredients
- Corn tortillas
- Cooked shredded chicken (rotisserie recommended)
- White beans (canned or cooked)
- Chicken broth (low-sodium)
- Green chilies (canned)
- Onion
- Garlic
- Cumin
- Chili powder
- Salt
- Pepper
- Optional toppings: Cheese, sour cream, lettuce, tomato
Instructions
- Heat 1 tablespoon of oil in a large pot over medium heat. Sauté the chopped onion and minced garlic until softened, about 3-4 minutes.
- Stir in the shredded chicken, white beans, chicken broth, green chilies, cumin, chili powder, salt, and pepper. Bring to a boil.
- Reduce heat and let it simmer for about 15 minutes, stirring occasionally until everything is heated through.
- In a separate pan, warm your corn tortillas for just a minute on each side.
- To assemble, place a generous scoop of the chicken mixture on each tortilla and top with cheese, sour cream, lettuce, and tomato as desired.
