- 2 chicken breasts
- 1 cup rice (any variety)
- 1 cup chicken broth
- 1 cup heavy cream
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parsley for garnish
Instructions
- In a skillet, heat the olive oil over medium heat.
- Add the diced onions and minced garlic. Sauté until soft and translucent—about 2-3 minutes.
- Season your chicken breasts with salt and pepper on both sides. Place them in the skillet and cook until golden brown on both sides (approximately 6-8 minutes).
- Pour in the chicken broth and bring it to a gentle simmer.
- Stir in the rice and make sure it’s well incorporated. Cover and cook until the rice is tender, about 15-20 minutes.
- Add the heavy cream, stirring to mix well. Continue cooking until the sauce thickens up, about 5 minutes.
- Serve hot, garnished with fresh parsley.
Notes
For a nuttier flavor and more fiber, use brown rice instead of white. You can also lighten up the dish with low-fat cream.
