- 1 pound chicken breast, cut into bite-sized pieces
- 8 ounces mushrooms, sliced
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Cooked rice, mashed potatoes, or pasta for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through—about 5-7 minutes.
- Remove the chicken from the skillet and set it aside.
- In the same skillet, add the mushrooms and cook until softened, roughly 4-5 minutes.
- Stir in the minced garlic and cook for another 30 seconds until fragrant.
- Add the spinach, cooking until it’s wilted.
- Pour in the heavy cream and add the Parmesan cheese, stirring until the cheese is melted and the sauce is creamy.
- Return the chicken to the skillet, stirring to combine everything evenly.
- Serve hot over your choice of rice, mashed potatoes, or pasta.
Notes
For a healthier version, substitute Greek yogurt for cream but add off the heat to prevent curdling.
