  • 8 ounces mushrooms, sliced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Cooked rice, mashed potatoes, or pasta for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through—about 5-7 minutes.
  3. Remove the chicken from the skillet and set it aside.
  4. In the same skillet, add the mushrooms and cook until softened, roughly 4-5 minutes.
  5. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  6. Add the spinach, cooking until it’s wilted.
  7. Pour in the heavy cream and add the Parmesan cheese, stirring until the cheese is melted and the sauce is creamy.
  8. Return the chicken to the skillet, stirring to combine everything evenly.
  9. Serve hot over your choice of rice, mashed potatoes, or pasta.

Notes

For a healthier version, substitute Greek yogurt for cream but add off the heat to prevent curdling.
