- 2 boneless, skinless chicken breasts (or 4 chicken thighs)
- 1 tablespoon olive oil
- 1 tablespoon butter
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon butter (for sauce)
- ½ small onion, diced
- 3 cloves garlic, minced
- 1 cup chicken broth
- ½ cup heavy cream (or half-and-half)
- ¼ cup Parmesan cheese, grated
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup white or brown rice
- 2 cups chicken broth or water for cooking rice
- ½ teaspoon salt (for rice)
- 2 tablespoons chopped fresh parsley (for garnish)
- Extra Parmesan cheese (for serving)
Instructions
- Cook the rice by bringing 2 cups of chicken broth or water to a boil, stir in rice and a pinch of salt, cover, reduce heat, and simmer for about 15–18 minutes for white rice or 35 minutes for brown rice.
- Season & sear the chicken by drying it and sprinkling both sides with garlic powder, paprika, salt, and black pepper, then sear in a skillet with olive oil and butter for 4–5 minutes on each side until golden brown.
- Make the creamy sauce by melting the additional butter in the same skillet, adding onions and sautéing until translucent, then adding garlic and broth, followed by cream, Parmesan, seasoning, and simmering until thickened.
- Simmer & smother by returning the seared chicken to the skillet, spooning sauce over it, covering, and simmering on low for 5–7 minutes until chicken reaches 165°F.
- Assemble & serve by plating rice, topping with chicken and sauce, and garnishing with parsley and extra Parmesan.
Notes
Feel free to customize with different herbs, spices or substitutes for a lighter version.
