- 4 boneless, skinless chicken breasts
- 2 cups chicken broth
- 1 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon paprika
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken breasts generously with salt, pepper, thyme, and paprika.
- Add the chicken to the skillet, cooking for about 6-7 minutes per side or until it’s nicely browned and cooked through. Remove chicken and set aside.
- In the same skillet, toss in the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Stir in the rice and cook for an additional 1-2 minutes, allowing it to absorb some of those lovely flavors.
- Gradually pour in the chicken broth, bringing the mixture to a boil before reducing the heat to low to simmer.
- Stir in the heavy cream, mixing well, and let it simmer until the rice is tender—about 15-20 minutes.
- Return the chicken to the skillet, nestling it into the rice and sauce.
- Cover the skillet and let it cook for an extra 5-10 minutes until everything is heated through.
- Serve warm and enjoy every comforting bite!
Notes
For a lighter version, substitute half-and-half for the heavy cream.
