Description
A comforting dish featuring tender chicken breasts in a creamy sauce served over fluffy rice, perfect for busy weeknights.
Ingredients
Scale
- 4 chicken breasts
- 1 cup rice
- 1 can cream of chicken soup
- 1 cup chicken broth
- 1 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- Heat a drizzle of olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper, and add them to the skillet. Brown on both sides until golden, about 5-7 minutes.
- Remove the chicken from the skillet and set aside on a plate.
- Reduce the heat slightly and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
- Stir in the cream of chicken soup, chicken broth, and heavy cream until well combined and smooth.
- Return the browned chicken to the skillet, ensuring it’s submerged in the creamy mixture. Bring it to a gentle simmer.
- Cover the skillet and let it cook for 20-25 minutes, or until the chicken is cooked through.
- Prepare the rice according to package instructions so it’s ready when the chicken is done.
- Serve the creamy chicken over a bed of rice, drizzling extra sauce on top.
