Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package directions. Reserve 1/2 cup of the pasta cooking water, then drain.

  3. Add the diced tomatoes to the skillet. Cook, stirring occasionally, for about 4–5 minutes, until they soften and release juices.
  4. Pour in the heavy cream. Add salt, black pepper, and red pepper flakes if using. Bring to a gentle simmer and let the sauce thicken for 2–3 minutes.
  5. Add the cooked pasta to the skillet. Toss thoroughly to coat. If the sauce seems too thick, add a splash of the reserved pasta water until you reach the desired consistency.
  6. Remove the skillet from the heat. Stir in the fresh basil.
  7. Serve portions topped with grated Parmesan cheese and an extra drizzle of olive oil if desired.
