Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper generously.
- Beat the eggs lightly in one bowl. In a separate bowl, mix the breadcrumbs with the grated parmesan cheese until combined.
- Dip each chicken breast into the egg, then coat thoroughly with the breadcrumb mixture.
- Heat the olive oil in a skillet over medium-high heat. Brown the chicken on both sides for about 3-4 minutes or until they develop a nice color.
- Transfer the browned chicken to a baking sheet and place it in the preheated oven. Bake for 20-25 minutes or until the chicken is cooked through.
- Cook the pasta according to package instructions until al dente.
- Heat the heavy cream in a saucepan over medium heat, seasoning it with salt and pepper to your liking.
- Toss the drained pasta in the creamy sauce until it’s evenly coated.
- Serve the crispy chicken alongside the creamy pasta and garnish with fresh parsley if desired.
Notes
For extra crunch, use panko breadcrumbs. For a lighter dish, substitute half-and-half for the heavy cream.
