Ingredients

- 4 small to medium chicken breasts (or 2 large, halved)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3–4 cloves garlic, minced
- 1 cup light cream (or heavy cream for a richer taste)
- 1 tablespoon Italian seasoning (or oregano)
- 1/2 cup grated parmesan cheese
- 1 cup chopped spinach (optional)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a skillet over medium-high heat.
- Add the chicken to the skillet and cook for 5-6 minutes per side, until golden brown and crispy.
- Remove the chicken from the skillet and set it aside.
- Adjust the heat to medium and add the minced garlic to the same pan. Sauté for about 30 seconds until fragrant.
- Pour in the cream while stirring continuously to prevent any scorching.
- Sprinkle in the Italian seasoning and grated parmesan cheese, stirring until the mixture is smooth.
- If using, stir in the chopped spinach and allow to simmer for 2-3 minutes.
- Return the crispy chicken to the pan, letting it soak up some of that luscious sauce.
- Allow it to simmer for an additional minute before removing from heat.
- Serve hot, paired beautifully with pasta, roasted vegetables, or fluffy mashed potatoes.
Notes
Use the freshest chicken possible for the best results. If you can find organic, free-range chicken, it makes a noticeable difference in flavor.
