Transform humble carrots into a crispy, flavorful side dish with these Crispy Smashed Carrots that are perfect for any meal.
Ingredients

- 2 lbs Carrots, fresh and vibrant
- 2 tbsp Butter
- 3 cloves Garlic, minced
- 2 tbsp Olive Oil
- Salt, to taste
- Pepper, to taste
- Fresh Herbs (optional), such as parsley or thyme
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the carrots.
- Boil the carrots in salted water until they are tender (about 15 minutes).
- Drain the carrots and allow them to cool slightly.
- Place the carrots on a baking sheet and gently smash each one with a fork or the bottom of a glass.
- Drizzle olive oil and melted butter over the smashed carrots, and sprinkle with minced garlic, salt, and pepper.
- Roast in the oven for 20-25 minutes, or until the edges are crispy and beautifully caramelized.
- Optionally, sprinkle with fresh herbs before serving.
Notes
For a vegan option, swap butter for a plant-based alternative. These carrots are best enjoyed fresh but can be stored in the refrigerator for up to 4 days.
