Ingredients

  • 2 lbs Carrots, fresh and vibrant
  • 2 tbsp Butter
  • 3 cloves Garlic, minced
  • 2 tbsp Olive Oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh Herbs (optional), such as parsley or thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the carrots.
  3. Boil the carrots in salted water until they are tender (about 15 minutes).
  4. Drain the carrots and allow them to cool slightly.
  5. Place the carrots on a baking sheet and gently smash each one with a fork or the bottom of a glass.
  6. Drizzle olive oil and melted butter over the smashed carrots, and sprinkle with minced garlic, salt, and pepper.
  7. Roast in the oven for 20-25 minutes, or until the edges are crispy and beautifully caramelized.
  8. Optionally, sprinkle with fresh herbs before serving.

Notes
