A creamy, flavorful one-pot pasta dish made in the slow cooker, featuring Cajun-seasoned chicken, bell peppers, and a rich tomato sauce.

- 1 lb boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bell pepper, sliced
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, with juices
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 8 oz penne pasta
- Fresh parsley, chopped for garnish
Instructions
- Pat chicken dry and place in a bowl. Drizzle with olive oil and sprinkle with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub to coat evenly.
- Heat a large skillet over medium heat and brown the chicken for 2–3 minutes per side.
- Transfer the chicken to the slow cooker.
- Scatter sliced bell pepper, onion, and minced garlic over the chicken.
- Pour diced tomatoes and chicken broth into the slow cooker.
- Cover and cook on low for 4–5 hours or high for 2–3 hours until chicken is tender.
- Remove chicken, shred, and return to the slow cooker.
- Stir in heavy cream and Parmesan cheese until smooth.
- Cook the pasta according to package directions until al dente, then add to the slow cooker.
- Stir to coat the pasta with sauce and warm through for another 15–20 minutes.
Notes
For best results, do not add pasta to the slow cooker during the cooking time; cook it separately.
