- 1.5 pounds boneless, skinless chicken breasts
- 1 cup diced onion
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream (or half-and-half)
- 1 cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- 1 cup tortellini (fresh or frozen)
- 1 cup fresh spinach, for garnish
- Fresh basil for garnish
Instructions
- Layer chicken breasts at the bottom of the Crock Pot.
- Add diced onions and minced garlic.
- Pour in chicken broth and diced tomatoes, then stir to combine.
- Season with Italian seasoning, salt, and pepper.
- Cover and cook on low for about 360 minutes, until the chicken is tender.
- Remove chicken and shred with forks; return to soup.
- Stir in heavy cream and Parmesan cheese until combined.
- Add tortellini and spinach, cooking on high for another 30 minutes.
- Serve hot and garnish with fresh basil.
Notes
For a lighter version, substitute heavy cream with half-and-half.
