  • 1 cup heavy cream (or half-and-half)
  • 1 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup tortellini (fresh or frozen)
  • 1 cup fresh spinach, for garnish
  • Fresh basil for garnish

Instructions

  1. Layer chicken breasts at the bottom of the Crock Pot.
  2. Add diced onions and minced garlic.
  3. Pour in chicken broth and diced tomatoes, then stir to combine.
  4. Season with Italian seasoning, salt, and pepper.
  5. Cover and cook on low for about 360 minutes, until the chicken is tender.
  6. Remove chicken and shred with forks; return to soup.
  7. Stir in heavy cream and Parmesan cheese until combined.
  8. Add tortellini and spinach, cooking on high for another 30 minutes.
  9. Serve hot and garnish with fresh basil.

Notes

For a lighter version, substitute heavy cream with half-and-half.
