- 3/4 cup (180 ml) low-sodium chicken broth
- 1 1/2 tsp Italian seasoning
- 1/2 tsp paprika
- 1/2 tsp black pepper (plus more to taste)
- 3/4 tsp salt (adjust to taste)
- 2 tbsp chopped fresh parsley (optional, for serving)
Instructions
- 1. Add potatoes and carrots to the bottom of the slow cooker and spread into an even layer.
- 2. Season vegetables with Italian seasoning, paprika, black pepper, and a pinch of salt.
- 3. Place chicken on top of the vegetables and season lightly with pepper.
- 4. Melt butter and stir in minced garlic, then pour over the chicken and vegetables.
- 5. Pour chicken broth around the edges.
- 6. Cover and cook on LOW 6–7 hours or HIGH 3–4 hours until chicken reaches 165°F and potatoes are fork-tender.
- 7. Shred or slice the chicken and stir it back into the garlic butter sauce.
- 8. Taste and adjust seasoning; add a splash of broth if you want more sauce.
- 9. Optional: mash a few potatoes to naturally thicken the sauce.
- 10. Serve hot, topped with parsley and extra black pepper if desired.
