- 1 pound chicken breast, diced
- 1 pound smoked sausage, sliced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 2 cups chicken broth
- 1 cup long-grain rice
- 2 teaspoons Cajun seasoning
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In your Crock Pot, combine the diced chicken, sliced sausage, chopped onion, bell pepper, celery, and minced garlic.
- Add the can of diced tomatoes, chicken broth, rice, Cajun seasoning, oregano, salt, and pepper.
- Stir everything well to ensure all ingredients are evenly mixed.
- Cover the pot and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is cooked through and the rice is tender.
- Before serving, garnish your jambalaya with chopped green onions for a fresh touch.
