- 6 pieces boneless, skinless chicken breasts (approximately 2 pounds)
- 1 can of cream of chicken soup (10.5 oz)
- 1 package of cream cheese (8 oz)
- 1 packet of ranch dressing mix (1 oz)
- 1 cup chicken broth
- 1 package of pasta (16 oz, penne or rotini works best)
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
- Optional: fresh parsley for garnish
Instructions
- Place the boneless, skinless chicken breasts into your crockpot.
- In a mixing bowl, combine the cream of chicken soup, cream cheese, ranch dressing mix, and chicken broth; stir until smooth.
- Pour the creamy mixture over the chicken, ensuring it is well coated; season with salt and pepper to taste.
- Cover the crockpot and cook on low for about 6 hours, or until the chicken is tender and shreds easily.
- Fifteen minutes before serving, cook the pasta in a large pot of salted boiling water according to package instructions until al dente; drain and set aside.
- Once the chicken is cooked, shred it in the crockpot and mix it with the sauce.
- Add the cooked pasta and mix thoroughly to coat.
- Top with shredded cheddar cheese, cover, and let sit for 5-10 minutes, until cheese melts.
- Serve hot, garnished with fresh parsley if desired.
Notes
For a lighter version, substitute Greek yogurt for cream cheese. Consider adding veggies for extra nutrition.
