Ingredients

- 1 pound ground beef
- 1 onion, diced
- 1 packet taco seasoning
- 1 can diced tomatoes (with juice)
- 1 can black beans, drained and rinsed
- 2 cups pasta (elbow or shell pasta)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 2 cups beef broth or water
- Salt and pepper to taste
Instructions
- In a skillet, cook the ground beef and onion over medium heat until the beef is browned. Drain any excess fat.
- Stir in the taco seasoning until the beef and onions are well coated.
- Move the seasoned beef into the crockpot. Add the diced tomatoes, black beans, pasta, and beef broth.
- Give everything a good stir until combined.
- Cover and cook on low for 4-5 hours, or until the pasta is tender.
- About 10 minutes before serving, stir in the shredded cheese until it’s melted and gooey.
- Season with salt and pepper to taste. Serve hot!
Notes
Feel free to substitute ground beef with black bean crumbles or lentils for a vegetarian option. Adjust cooking time based on your slow cooker model.
