Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 1 packet taco seasoning
  • 1 can diced tomatoes (with juice)
  • 1 can black beans, drained and rinsed
  • 2 cups pasta (elbow or shell pasta)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 cups beef broth or water
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook the ground beef and onion over medium heat until the beef is browned. Drain any excess fat.
  2. Stir in the taco seasoning until the beef and onions are well coated.
  3. Move the seasoned beef into the crockpot. Add the diced tomatoes, black beans, pasta, and beef broth.
  4. Give everything a good stir until combined.
  5. Cover and cook on low for 4-5 hours, or until the pasta is tender.
  6. About 10 minutes before serving, stir in the shredded cheese until it’s melted and gooey.
  7. Season with salt and pepper to taste. Serve hot!

Notes

Feel free to substitute ground beef with black bean crumbles or lentils for a vegetarian option. Adjust cooking time based on your slow cooker model.
