Description
A comforting, easy casserole made with pantry staples and rotisserie chicken, topped with crispy buttery crackers.

- 2 cups shredded cooked chicken (rotisserie chicken works great)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 sleeve (about 30) buttery round crackers, crushed
- 1/2 cup (1 stick) unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- In a large bowl, combine the shredded chicken, cream of chicken soup, and sour cream, mixing until smooth and evenly combined. Spread the filling into the prepared baking dish.
- In a medium bowl, combine the crushed buttery crackers with the melted butter and toss until every cracker piece is moistened.
- Sprinkle the buttery cracker mixture evenly over the chicken layer, pressing gently to adhere.
- Bake for 30–35 minutes, until the filling is hot and bubbly and the topping is golden-brown.
- Remove from the oven and let sit for 5 minutes before serving warm.
Notes
You can swap Greek yogurt for sour cream or use gluten-free crackers for a gluten-free version. Leftover roasted chicken or canned chicken can also be used.
