  • 2 cloves Minced Garlic
  • 1 cup Grated Cucumber

  • 1 teaspoon Paprika
  • 1 cup Cucumber Substitute (Diced zucchini or bell pepper)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the rice and chicken broth in a large baking dish, stirring well.
  3. Season the chicken breasts with salt, black pepper, and paprika before placing them on top of the rice mixture.
  4. Mix olive oil, minced garlic, and lemon juice in a bowl, then drizzle it over the chicken.
  5. Cover the dish with aluminum foil and bake for 30 minutes.
  6. Remove foil and bake for an additional 10-15 minutes until the chicken is cooked through and the rice is tender.
  7. Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, dill, and oregano in a bowl, adding salt and pepper to taste.
  8. Serve the dish with a generous dollop of tzatziki sauce on top!
