- 2 cups Long Grain White Rice
- 4 cups Chicken Broth
- 2 pieces Boneless, Skinless Chicken Breasts
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 cup Greek Yogurt
- 2 cloves Minced Garlic
- 1 cup Grated Cucumber
- 2 tablespoons Dill
- 2 tablespoons Lemon Juice
- 1 teaspoon Oregano
- 1 teaspoon Paprika
- 1 cup Cucumber Substitute (Diced zucchini or bell pepper)
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the rice and chicken broth in a large baking dish, stirring well.
- Season the chicken breasts with salt, black pepper, and paprika before placing them on top of the rice mixture.
- Mix olive oil, minced garlic, and lemon juice in a bowl, then drizzle it over the chicken.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove foil and bake for an additional 10-15 minutes until the chicken is cooked through and the rice is tender.
- Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, dill, and oregano in a bowl, adding salt and pepper to taste.
- Serve the dish with a generous dollop of tzatziki sauce on top!
