- 4 cups Chicken Broth
- 2 pieces Boneless, Skinless Chicken Breasts
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 cup Greek Yogurt
- 2 cloves Minced Garlic
- 1 cup Grated Cucumber
- 2 tablespoons Fresh Dill
- 2 tablespoons Lemon Juice
- 1 teaspoon Oregano
- 1 teaspoon Paprika
- 1 cup Cucumber Substitute
Instructions
- Preheat your oven to 400°F (200°C).
- Prep the chicken: In a bowl, combine olive oil, salt, pepper, and paprika. Coat the chicken breasts in this mixture.
- Layer the rice: In a deep baking dish, spread the rice evenly across the bottom.
- Add the broth: Pour the chicken broth over the rice, ensuring it’s evenly distributed.
- Place the chicken: Lay the seasoned chicken breasts on top of the rice.
- Cover and bake: Seal the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Make the tzatziki: Mix Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, and salt in a bowl until combined.
- Finish the chicken: After 30 minutes, remove the foil, and bake for an additional 10-15 minutes or until the chicken is thoroughly cooked (165°F internal temperature).
- Serve: Fluff the rice, and serve with a dollop of tzatziki on top. Enjoy!
Notes
For extra flavor, consider brining the chicken before cooking and letting the tzatziki sit in the refrigerator for an hour.
